Buttermilk Pancakes

pancakesWe turned an oops into a yum! My husband bought buttermilk by mistake thinking it would make milkshakes extra creamy. Yuck! Extra sour maybe. But, my sons and I made pancakes from scratch and they were extra good.  We had the classic breakfast for dinner with bacon. They love switching it up. We sprinkled chocolate chips in the batter to make it even more tasty and a little rich.  It’s made from scratch but how hard can pancakes really be? Give the recipe a try.

I’d like to apologize for the delay in my posts. I suffer from migraines and have had a rash of them lately. Daily! I have new meds and see relief in my future. I look forward to trying out new and fun recipes for you! Let’s get cookin’

Buttermilk Pancakes

Golden brown fluffy cakes with moist centers and crispy edges.

Ingredients
  • 1 cup flour
  • 1 Tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 beaten egg
  • 1 cup buttermilk
  • 2 Tablespoons cooking oil
Instructions
  1. In a mixing bowl stir together flour, sugar, baking powder, baking soda and salt. In another mixing bowl combine egg, buttermilk, and cooking oil. Add to flour mixture all at once. Stir mixture just till blended but still slightly lumpy.
  2. Pour ¼ cup batter onto a hot. lightly greased griddle or skillet for each pancake. Add additional buttermilk to thin the batter if needed.
